Fresh roadside peaches calls for fresh pancakes. A few ingredients…
Plus some peaches.
Add a little egg (make sure we get that protein in there) and yum. Breakfast!
serves 2-3: cook time: 15 minutes
(modified from this pancake recipe via 101cookbooks)1 cup flour
1/2 tsp aluminum-free baking powder
1/4 tsp baking soda
1/6 cup sugar
1/4 tsp salt
1 1/8 cup milk (original recipe, once again, calls for buttermilk)
1 egg, lightly beaten (or just mixed in with the rest :D)
1 Tbs butter, melted
Mix all ingredients and cook over medium heat. Flip cakes when they start to bubble. I find the trick with pancakes is to keep the heat low(ish) and make sure you butter the pan frequently.
After breakfast, we played with the fire/smoke. 🙂
